Goodstock Insider: May 2025

Welcome to the May edition of The Goodstock Insider, where we bring you timely insights to help your restaurant thrive.

This month, we’re focused on the rush of “Dads and Grads” that comes with Graduation, Father’s Day, and the unofficial start of Summer! But first, let’s talk about the Strip Steak!

The (Texas) Strip Steak

The Strip Steak is a standout on any menu. Its perfect balance of texture and taste makes it a versatile, premium option that works just as well for elevated entrées as it does for steak sandwiches and specials.

Here are a few different ideas for how you can feature the Strip Steak on your menu:

  • “Texas Strip & Sip” Pairing – Feature the Strip Steak alongside a curated wine, bourbon, or craft beer pairing for an elevated, limited-time experience.
  • “Date Night for Two” Bundle – Two Strip Steaks, shared appetizer, and dessert for one set price—designed for couples or celebrations.
  • “The Steak Sandwich Takeover” – Offer a gourmet steak sandwich using sliced Strip Steak with house-made aioli, grilled onions, or other high-value toppings for lunch or happy hour.
  • “Local Legends Special” – Collaborate with a local brewery, farm, or sauce maker to feature the Strip in a regional collaboration plate or platter.

Use Social to Cater to the Graduates

Graduation season can present a big catering opportunity. And while the parents are picking up the tab, the grads do likely have a say in where the food is coming from. Start talking about your catering services on social media now to get into their consideration set early!

Looking Ahead: Father's Day

Father’s Day is a great opportunity to increase both traffic (over 20%) and ticket size (over 15%).
  • Lunch, not Brunch: The majority of diners (75%+) are looking to celebrate Dad with a nice lunch or dinner.
  • Beef & Beer: Dad appreciates the classics, but that doesn’t mean you can’t mix it up with a new craft beer feature, flight, or special LTO pairing.
  • Take Out Kit: Offer a meal kit-style box with meat, sauces, sides and instructions for cooking a restaurant-quality meal at home.
